Falafel

BRB, manifesting a vacation to the islands of Greece while I eat this dinner.

Ingredients (Makes ~15 falafel), Prep Time: 20 minutes

  • 1 pound dried chickpeas soaked in water overnight

  • 6-8 garlic cloves, minced

  • 1 bunch parsley, roughly chopped

  • Juice from 1/2 a lemon

  • 1/2 an onion, chopped

  • 2 tbsp flour

  • 1.5 tsp baking powder

  • 1.5 tsp cumin

  • 1 tsp coriander

  • 1/2 tsp turmeric

  • EVOO

  • Salt and pepper to taste

Method

  • Put all ingredients in a food processor except for the olive oil

  • Process until everything is well-combined, leaving some texture

  • Add olive oil and pulse until mixture is moistened

  • Refrigerate for ~1 hour, then take it out and form into patties

  • Fry until golden brown on each side and enjoy!
