Falafel
BRB, manifesting a vacation to the islands of Greece while I eat this dinner.
Ingredients (Makes ~15 falafel), Prep Time: 20 minutes

1 pound dried chickpeas soaked in water overnight

6-8 garlic cloves, minced

1 bunch parsley, roughly chopped
-
Juice from 1/2 a lemon
-
1/2 an onion, chopped
-
2 tbsp flour
-
1.5 tsp baking powder
-
1.5 tsp cumin
-
1 tsp coriander
-
1/2 tsp turmeric
-
EVOO
-
Salt and pepper to taste

Method

Put all ingredients in a food processor except for the olive oil
-
Process until everything is well-combined, leaving some texture
-
Add olive oil and pulse until mixture is moistened
-
Refrigerate for ~1 hour, then take it out and form into patties
-
Fry until golden brown on each side and enjoy!
