PESTO BEAN BOWL
If you haven't tried Trader Joe's Kale Cashew Pesto yet, you haven't been LIVING. The ingredients are super clean and the taste is unreal - I eat it by the spoonful most days. Anyway, why are you still reading this?! GO TO TRADER JOE'S FOR CRYING OUT LOUD.
Ingredients (Serves 1), Total Time: 15 minutes

1/2 can chickpeas, rinsed and drained

1/2 can cannellini, rinsed and drained

1/2 kidney beans, rinsed and drained

3 tomatoes, chopped

1 garlic clove, chopped
-
1 large handful arugula
-
2 large handfuls spinach

1.5 tbsp Trader Joe's Kale Cashew Pesto

Juice of ~1/2 a lemon
-
1 tsp turmeric
-
Salt and pepper to taste

EVOO
Method

Toss chickpeas and beans in turmeric, salt and pepper

Begin to sauté garlic in olive oil on low heat for about 30 seconds

Add chickpeas and beans to the pan, cooking on low-medium heat for 2-3 minutes

Add arugula and spinach to the pan until it's cooked down

Transfer everything to a bowl, adding in tomatoes, pesto and lemon juice, toss together and enjoy!
