TAHINI TUNA SAMMY

This vegan tuna salad is DELICIOUS. Now I know you're thinking this is the absolute WEIRDEST combination of foods, but trust me when I say it somehow comes together perfectly. Don't knock it 'til you try it, folks.

Ingredients (Serves 2)​, Total Time: 25 minutes

  • 1 can chickpeas, rinsed and drained

  • 2 pickles, chopped

  • 3 stalks celery, chopped

  • 1/2 cup corn

  • 2 tablespoons tahini

  • 2 tablespoons capers

  • 1 tablespoon soy sauce or tamari

  • 1 tablespoon Dijon mustard

Method

  • Mash chickpeas in a bowl

  • Add tahini, soy sauce and mustard to the bowl and mix

  • Add pickles, celery and corn to the bowl and fold in

  • Toast your favorite bread, add in the tuna and enjoy!
