TURMERIC TOFU SCRAMBLE
If you’re Team Savory for breakfast like I am, you HAVE to try this tofu scramble. It’s perfect with some avocado, salsa, toast and home fries!
Ingredients (Serves 1), Total Time: 20 minutes

⅓ of a firm tofu block, drained of excess liquid

1 small handful cherry tomatoes, chopped

1 red pepper, chopped

¼ of an onion
-
1 handful spinach
-
1 clove garlic, chopped
-
1.5 tsp turmeric
-
1/8 tsp paprika, chili powder, cayenne, salt, pepper
Method

After ALL excess liquid is drained from the tofu, crumble it into a bowl, add your spices and give it a good mix

Begin sautéing garlic and onion in olive oil on low heat until golden brown

Add tofu mix and cook on low-medium heat for 1-2 minutes

Add veggies and cook on low-medium heat until veggies soften

Turn the burner to low and add spinach (once it cooks down, you’re all set), enjoy!
