TURMERIC TOFU SCRAMBLE

If you’re Team Savory for breakfast like I am, you HAVE to try this tofu scramble. It’s perfect with some avocado, salsa, toast and home fries!

​Ingredients (Serves 1), Total Time: 20 minutes

  • ⅓ of a firm tofu block, drained of excess liquid

  • 1 small handful cherry tomatoes, chopped

  • 1 red pepper, chopped

  • ¼ of an onion

  • 1 handful spinach

  • 1 clove garlic, chopped

  • 1.5 tsp turmeric

  • 1/8 tsp paprika, chili powder, cayenne, salt, pepper

Method

  • After ALL excess liquid is drained from the tofu, crumble it into a bowl, add your spices and give it a good mix

  • Begin sautéing garlic and onion in olive oil on low heat until golden brown

  • Add tofu mix and cook on low-medium heat for 1-2 minutes

  • Add veggies and cook on low-medium heat until veggies soften

  • Turn the burner to low and add spinach (once it cooks down, you’re all set), enjoy!
